Anything to make Gnome better is welcome, and if they have to fork it (that GoneMe thing perhaps) then I may have to reevaluate... Reading Dolson's advice I created an empty file (touch .hidden) and typed the names of the icons in it. It sounded kinda stupid but .... anyway ... edit; Ok this is weird. It's in the gnome-control-center>Removable Storage. I think I do recall seeing something about 'volume' though. It's not in gconf-editor in ubuntu so I'll have to boot to mandrake and see.
