This may sound a little simple, and if it's an obvious answer that I'm just not seeing, please excuse me.

 

How do you change your desktop fonts and colors in GNOME? I have a light background, and I can barely read the fonts?

You can't change font colors in gnome though. :-\

They change according to the gtk2 theme (control theme) set, but you can't set a custom color.
