What do you want to save from evolution exactly? Mailing lists/user-accounts or some system-tweaks that you made to your base-system (hacking as root)? For the normal user-stuff, simply burn the ~/.evolution folder onto a DVD or several CDs (depending on how much data you have there). If everything is burned, you need to set up the mail-accounts again hen you copy it back afaik. But all filters will be there.

I have usually backed up the whole .evolution directory. Recently did that when I got a new machine. I back up to another computer via LAN. I've never had a problem with this. For what it's worth I also have my .evolution directory in /home as a link to another partition separate from /home (makes it easier to mess with distros).
