he's using some extra options

 

u is the same as update

D is for deep dependency checking, and isn't always necessary

p is for pretend, it will just list what it's going to install instead of actually doing it

v is verbose, just gives you more information

 

system just means the system base, not every program (where as world includes all installed programs).  see man emerge for more options.

 

Strictly speaking world isn't every installed program - jsut the system ones and ones that you have specifically installed. dependencies of those packages are often not included in the world list. This means, in theory, that you can easily remove packages that are no longer needed as deps and also that the deep option is helpful in making sure your deps are all up to date.
