If you don't mind me saying so, your trying to "run before you can walk". You should learn some of the Linux basics first before trying to set up apache or php. But to answer your last question, vi (or vim) is a text editor used in a consol. To use it, type vi in a consol followed by the file_name you wish to edit. MC is short for "midnight commander" and is also used in a consol , as sugested by aioshin you might find that easier to use.
