Making changes to fstab persistent

I'm running my own remastered version of MCNLive from a USB stick, but i now want to change the way it mounts my drive to include the noatime option (which apparently reduces the writes, and improves the life of the flash memory).

I have tried editing the fstab of the system when running from USB, but i noticed each time i reboot, the fstab is overwritten (autogenerated by HWDetect?).

Is there any way to change this? do i have to reconfigure HWdetect and reroll another image?
